While it falls on April 22, as responsible consumers we should keep in mind all year round that we not only use our planet -we must also protect it. Food production is one of the areas that places the greatest demand on Earth’s resources.

Every decision is an opportunity
According to a study by the European Commission, more than 40% of the environmental footprint of an average Hungarian consumer – similar to the European average – comes from their diet, primarily due to high consumption of meat and dairy products.
That’s why one of the simplest ways to adopt a more environmentally conscious lifestyle is to reshape our diet in a planet-friendly way – and it’s easier than you might think.

This is no longer just a problem for future generations
One of the biggest environmental challenges related to food is that agriculture already occupies nearly half of the Earth’s habitable land, significantly contributing to the loss of natural habitats. As a result, food production is a leading driver of biodiversity loss. In addition, food production (and waste) is responsible for around a quarter of greenhouse gas emissions, 80% of freshwater use, soil degradation, environmental pollution (such as microplastics), and the spread of antibiotic-resistant bacteria.
We are already experiencing many of these effects in our daily lives – through reduced food diversity, increasingly monotonous diets, and related health issues. At the same time, this is the food environment in which we are raising our children, shaping their future eating habits.
Can I support the environment through my food choices?
Yes – more than you might think. If protecting our natural environment matters to you, and you want your children and grandchildren to enjoy a diverse and rich diet, you can make a real impact by following these principles:
- reduce food waste
- eat less (but better quality) meat and dairy, and more plant-based protein
- increase your intake of vegetables, fruits, legumes, whole grains and pseudocereals, seeds, and nuts
- choose locally sourced, seasonal, minimally processed foods from shorter supply chains and sustainable agriculture
- diversify the ingredients you buy
- use energy- and water-efficient cooking methods
- practice selective waste collection
- compost whenever possible
If you’re dining at a Delirest restaurant and have the option to build your own plate, we recommend the Austrian dietary guideline: fill three-quarters of your plate with plant-based sides – salads, grains, or pseudocereals – and use the remaining space for protein sources, whether animal-based or plant-based (such as legumes, tofu, or falafel).
Recipe recommendation
Coconut tofu curry with basmati rice
Ingredients (serves 4):
- 400 g natural tofu (or paneer)
- 1 tbsp red curry paste
- 200 ml coconut milk
- 1 can peeled chopped tomatoes
- 1 onion
- 2 cloves garlic
- a small piece of ginger
- 1 bell pepper
- 1 zucchini
- 1 tsp lime juice
- 1 tsp garam masala
- oil
- salt
- For garnish: steamed basmati or jasmine rice
Preparation:
Sauté finely chopped onion in a little oil until translucent, then add grated ginger and garlic. Stir in the curry paste and cook briefly to release the aromas, being careful not to burn the spices. Add the chopped tomatoes and garam masala, and simmer for a few minutes to let the flavors combine. Blend the sauce until smooth to create a rich, velvety curry base.
Add the diced vegetables and pan-fried tofu or paneer cubes, and cook until tender. Finish with lime juice and serve with steamed basmati rice.

This dish is a personal favorite—I usually make it nice and creamy when I want something quick yet special. I often use paneer, which is now widely available in Indian grocery stores and works beautifully in this rich, spiced sauce. Enjoy your meal! 🍛
